Latest version not tagged in SVN
WordPress.org reports version 1.2 but it doesn't match any tagged release, so the latest version isn't available as a tagged release via Composer. or see all untagged plugins.
Install latest from trunk
Install with dev-trunk to get the latest code. Composer will pin to a specific SVN revision in your lock file.

composer require wp-plugin/disable-grunion-admin-link:dev-trunk

However … some of you may not like the addition of an extra link in your WordPress admin menu which this new version includes.
